Adrien Descouls, ambassador for Auvergne's terroir
Adrien Descouls makes the Auvergne region his muse. Inspired by the farmers' markets, the seasonal nuances and the variations in altitude that characterise the Auvergne, the Michelin-starred chef nurtures a close relationship with the sometimes unsuspected or forgotten richness of the Auvergne terroir.
The volcanic heights and their summer blueberries, the Planèze plateaux and their blond peas and lentils, the mountains sheltering the delicacy of farm pigs: the Auvergne and the Puy-de-Dôme guide the chef's creativity through their nourishing altitudes.
The panoramic dining room
Origines puts its sources of inspiration on full display in its restaurant room, which is enhanced by a large bay window offering an exceptional panoramic view of the Auvergne volcanoes. It's an intimate room, where volcanic stone, raw oak and the gentle waters of the Auvergne lakes flow across the tapestries. Each table has its own sensory universe, with one mission: to immerse guests in an exceptional gastronomic journey to discover the Puy-de-Dôme.
The plateau terrace
At the back of the restaurant, the brand new Origines terrace offers a unique panoramic view of the Broc plateau and the volcanoes of the Sancy massif. Covered in local volcanic stone and furnished with elegant armchairs, the plateau terrace welcomes guests for aperitifs during the summer season. An authentic introduction to the Michelin-starred cuisine of chef Adrien Descouls.
When the Auvergne seasons play out their cool or icy symphonies, the winter lounge welcomes guests for an appetiser, comfortably seated on wide velvet benches by a digital fire.
The Chef's Office
Step behind the scenes of Origines en cuisine and take a journey to the heart of Adrien Descouls' creative explorations. The Bureau is the intimate place where the chef will tell you about his childhood in the farming world, in the Auvergne tradition, with its wide drawers that once housed bread and cutlery. This is where the chef imagines his dishes, and this is where you embark on a culinary journey in his mind, seated on wide red velvet benches, a nod to the Parisian bistros of the Auvergne.
Exclusive table bookable for 4 people maximum, only on the tasting menu.
The cellar and its grimoire
A veritable cabinet of curiosities from the world of wine to explore... The sommelier at the Origines restaurant continually selects the vintages to be enjoyed at the table for an optimal experience. In this in-house grimoire, the great, unmissable estates rub shoulders with tempting discoveries from small vineyards in the four corners of France. 80% of the menu is made up of wines that are at least organically grown.
The philosophy of the winemakers, the unique expression of a wine, let yourself be guided by the story that inspires you through the pages of this grimoire of 800 references and a thousand shades of vines..
